I attended the (National Saint David's Day Parade ) event at Cardiff which paraded through the City streets from the National Museum, the City Centre and down to the Assembly at Cardiff Bay. Lots of happy and patriotic people enjoyed the day and the sun shone. Let's hope where ever the Welsh are in the world there were St. David's Day events which were successful. It would be wonderful to see these Parades grow and grow and become an established part of Welsh life both home and around the world. I know how much effort is put into them by the organisers. By the way, I am sorry I have not included the new song for St. David's Day on this video. I await a CD copy. Jones Sydney Welsh Choir The Sydney Welsh Choir celebrated Australia Day by singing at the Celtic Festival held at Bradfield Park on the shores of Sydney Harbour, in the shadow of Sydney Harbour Bridge and with the city skyline and the Sydney Opera House as the backdrop. Pictures of the occasion can be seen in the photo gallery on the choir website, www.swc.org.au. On Sunday March 1 we will hold our St David's Day Celebration at Carnarvon Golf Club, Lidcombe. The spelling may be anglicised but the fairways are as green as Gwynedd and you can almost make out the castle ramparts and the jagged outline of Snowdonia. The choir, conducted by Viv Llewellyn, will sing a wide range of musical items, mainly in Welsh, and will lead the community singing. Aneurin Rhys Hughes, formerly the Ambassador for the European Union in Australia, will propose the toast to St David, and the audience will also enjoy a performance by the brilliant Harp Divas, Meinir Thomas and Karen Hickmott. Cennin mewn Saws Oren (Leeks in Orange Sauce) Ingredients: 450g leeks, sliced and finely chopped 30g butter freshly-grated zest of 1 orange 6 tsp orange juice salt and black pepper, to taste 3 tbsp flour 360ml milk 2 tbsp lemon juice Method: Melt the butter in a large saucepan and use to fry the leeks for 2 minutes before adding the lemon juice and seasoning to taste. Secure the lid and allow the mixture to sweat gently for about 5 minutes, or until tender. Add the flour to the mixture and stir in thoroughly before adding the orange zest. Stir to combine then gradually add the milk, stirring all the while. Bring the mixture to a boil then reduce to a simmer, allowing it to cook for 5 minutes more. Add the lemon juice and serve hot.
